Why the kitchen is the building
Usource works for owners whose buildings carry a mission, and this is the clearest case of it. Residents are housed on site and fed on site, so the commercial kitchen is not back-of-house equipment. It is the infrastructure the organization runs on, and every day it is out of service is a day the mission is harder to deliver.
